With retail sales of organic foods increasing by 20% per year, the Canadian organic industry cannot meet demand. Many more farmers, input suppliers, and food processors are needed. "Transition to Organic Agriculture" addresses the steps involved in becoming part of the organic industry from the principles behind organic agriculture, through the certification process, to transition management practices for crops and livestock. Students learn through readings, on-line class discussions and written assignments. The course consists of five stand-alone modules:

• Module 1: Why Organic?
  Why become part of the growing organic industry? How is the organic industry structured? Is organic agriculture sustainable? What should I consider before making the transition to organic?
  
  
  
• Module 2: Organic Certification
  What is organic certification? What are the advantages and disadvantages of certification? Which certifying body should I choose? What should I know about organic standards?
  
  
  
• Module 3: Planning the Farm System
  What do I need to do to make a successful transition? What's involved in the planning process? What kind of record keeping system is needed? What are the economics of transition?
  
  
  
• Module 4: Transition to Organic Crop Production
  What strategies do organic farmers use to manage weeds, insects and diseases? What inputs and amendments can be used for organic crop production? What is the role of crop rotation?
  
  
  
• Module 5: Transition to Organic Livestock Production
  What strategies do organic farmers use for parasite and disease control? How are animal welfare issues addressed in organic standards? What is an integrated livestock system?
